First Spring Greens of the Year

With the very warm weather that we’ve been having the past week, in the upper 70’s to mid 80’s, the spring greens have been popping up all over the place a month and a half early.

I found some Curly Dock (Rumex crispus), Dandelion (Taraxacum officinale), and Wild Garlic (Allium canadense)

 

Here’s what I made the other day with the first spring greens of 2012…

 

Added to the dish was some boletus mushrooms that I thawed out in some cold water for about 15 minutes and then sliced up, and some regular beef hamburger patties that I fried up, and then cut up and added to the dish.  It was served over a bed of white rice, and was absolutely delicious!
